I love a good classic TV kitchen conundrum. Whether it’s an over the top crash diet or someone trying a little too hard to impress their friends, I love me some cooking hi-jinks. Emergency! is one of my favorite shows from the 70s, and is quite rich with kitchen hilarity and curious creations. In Season 3 (affiliate link to the DVD), Roy DeSoto introduces us to a fictional recipe he acquired from his sister-in-law: Eggs Lupin. What? After some joking around, and cautious preparation by Roy, we learn that Eggs Lupin is basically scrambled eggs with a special ingredient: sage.
Unfortunately Roy never gives us the full recipe, but he can be seen adding several different herbs and spices from Station 51’s McCormick-Schilling Gourmet Spices rack.
What Would Chet Do?
My herb garden is flourishing, so I decided to try this sage recipe, incorporating a little sage advice from Station 51’s lineman and chief wise-cracker, Chet Kelly. Chet taught us a few things about food in the Great Crash Diet: An occasional pumpernickel roll is okay to consume . . AND you should eat lots of figs. Thus, an idea for a new sandwich was born.
What’s the Secret Ingredient? Sage!
Not wanting to have a Dr. Seuss moment, I decided to fry my sage leaves, and sprinkle them on top. Scrambled eggs were topped with a little melted cheese and fried sage leaves, then carefully placed on toasted pumpernickel, which was spread with a thin layer of fig butter. I also added slices of tomato for another layer of flavor. The result was wonderful! A mixture of sweet and salty, creamy and crunchy. It’s an Eggs Lupin sandwich both Roy and Chet would be proud of!
- Two eggs
- Milk
- Salt
- Pepper
- Four sage leaves
- Olive oil for frying
- Grated cheese (I used a Gruyere/cheddar blend)
- Two slices pumpernickel bread
- 1 teaspoon fig butter
- Two slices of tomato
- In a small pan, heat olive oil on medium high heat until hot. Fry dry sage leaves for about three seconds. Place on a paper towel to cool.
- Scramble two eggs to your liking. I add salt, pepper, and a couple of splashes of milk to mine.
- When the eggs are almost done, sprinkle with grated cheese and allow to melt.
- Toast two pieces of pumpernickel bread.
- Spread one slice of toast with fig butter. Top with the scrambled eggs, fried sage, and tomato slices.
- Enjoy!
Enjoy my Eggs Lupin sandwich with a large glass of milk. Those boys drink A LOT of milk.
Notes on Eggs Lupin Ingredients
I used the fig butter from Trader Joe’s. It’s soooo good! Basically a fig newton without the cookie. For the bread, I used Pepperidge Farms Dark Pumpernickel.

Maybe. Roy doesn’t seem to stray far from what he can find on his McCormick Gourmet spice rack though.
