Seasonal fruit is one of my favorite ingredients to use in cocktails, and this time of year I’m living on peaches. I usually wait for the Colorado peaches to make an appearance at my local grocery store, and now is that time! The Peach Blow Fizz is a classic cocktail that is creamier than a typical peach gin fizz. Who doesn’t love peaches and cream? There are many variations, but this one also has a lot of brightness due to two kinds of citrus: lemon and lime.
Other Versions
I love scouring old cocktail recipe books and newspaper articles for different variations of cocktails. There certainly are a lot of different twists on the Peach Gin Fizz and Peach Blow Fizz. Many recipes include strawberries, but since strawberry season is over, I opted for one from a 1940s Trader Vic’s Bartender’s Guide that is all about the peach, and lots of citrus. I can never get enough citrus.
1893 Version: Ta-ra-ra-boom-de-ay!
The Peach Blow’s history goes back much further, however. In my newspaper research I uncovered many published versions of the recipe at the turn of the twentieth century. A fabulous article in the Philadelphia Inquirer in 1893 was one of the earlier accounts and was accompanied by this charming description and illustrations:
Half a dozen strawberries are macerated with a muddler; powdered sugar, orange juice, white of egg, Curacoa, and maraschino are added. Ice is packed in the glass; it s all shaken until thoroughly chilled and then strained into a large punch glass; its color is peachy; its favor- um-um-um; its effects, after four or five- “ta-ra-ra-boom-de-ay!”

The Untwisted Peach Blow Fizz
For my version of the Peach Blow Fizz, I added a little agave and a couple of dashes of aromatic bitters. I add bitters to most of my cocktails as they add another lovely layer of flavor. Try it and let me know what you think of this version of the Peach Gin Fizz!
Peach Blow Fizz
Ingredients
- 2 oz gin
- 1 oz half and half
- 1/2 teaspoon agave
- Half a fresh peach, mashed
- Juice from half a lime
- Juice from half a lemon
- 2 dashes aromatic bitters
- ice
Instructions
- Mash half of a peach in a cocktail shaker.
- Add the other ingredients, including ice.
- Shake for at least 15 seconds
- Strain and pour into a glass filled with ice.
- Garnish with peach slices if desired.
